Shiitake Squares (PMA 2017)

1 pound Italian bread crumbs
1.5 cups + 2 Tbsp Olive oil
½ cup + ¾ cups grated Parmesan cheese
16 eggs
1 quart cream
2 Tbsp crystal hot sauce
2 tsp crab base
2 Tbsp Creole
½ tsp thyme
3 Tbsp salt and pepper blend
½ pound crabmeat picked
4 whole shallot, minced
½ cup bacon crumbles
1.5 cups shiitakes
2 tsp minced garlic
¾ cup feta cheese crumbles

Blend breadcrumbs, 1.5 cups olive oil and ½ cup Parmesan cheese in food processor.

Parchment line a ½ sheet pan

Press crumb mixture into pan and bake until golden. Let cool.

Mix eggs, cream, and crystal hot sauce.

Rough chop shiitakes and sauté in 2 Tbsp of olive oil. Add Creole, thyme, shallot and garlic until fragrant, add crab base and remove from stove to cool.

Sprinkle mushroom blend over crust, then bacon, and crabmeat and ¾ cups feta and ¾ cups Parmesan cheeses.

Pour custard on top and bake at 325°F until golden and set. Let cool over night, then cut into squares.
