Shrimp Bienville Dip (PMA 2017)

8 oz. 70-90 shrimp, cooked and diced
1 yellow onion, chopped
1 lb. white mushrooms (minced in food processor)
¼ minced garlic
¾ cup olive oil
¼ cup Creole spice
1 Tbsp kosher salt/pepper blend
3 cups Italian breadcrumbs
½ cup white wine
¾ cup brandy
2 Tbsp shrimp base
2 cups milk
2 cups cream
¼ cups crystal hot sauce

Sauté onion in olive oil, add mushrooms and garlic. Sauté until garlic is fragrant.

Add Creole spice and salt and pepper.

Add breadcrumbs, wine, brandy, shrimp base, milk, cream and crystal.

Add shrimp, adjust seasoning or milk for taste and texture.

Cook until mushrooms are tender and serve.
